{Recipe} Chicken Tortilla Casserole

Some of my favorite recipes are the ones that have been handed down from my family. Chicken Tortilla Casserole comes from my momma’s kitchen and was always my dad and I’s favorite dish growing up.



1 lb of cooked chicken (I used a pre cooked rotisserie chicken), shredded

12 tortillas cut up into 1 inch triangles

jar of pimentos

1/2 c sliced almonds

can cream of chicken soup

8 oz sour cream

can of olives diced

large jar of thick salsa

large block of colby cheese, shredded

small can of Ortega chilies 


Preheat oven to 350 degrees. Mix all ingredients together and spread into a casserole dish. Cook covered for 30 minutes.
